Cheddar & Red Pepper Tartlets

Ingredients for the pastry

  • 1½ cups all-purpose flour
  • ½ cup butter
  • ½ cup Kingdom cheddar, shredded
  • ½ tsp mustard powder
  • 1 tbsp cold water

Ingredients for the filling

  • 1 tbsp sunflower oil
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 red pepper, thinly sliced
  • 1 zucchini, diced
  • 2 tomatoes, chopped
  • 1 tsp chopped thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup Kingdom cheddar cheese


To make the pastry:

  1. Put the flour and mustard powder in a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
  2. Mix in Kingdom cheddar, adding enough water to form a firm dough.
  3. Turn onto a floured surface and knead lightly until smooth. Roll out thinly and cut out 12 disks using a 4inch plain cutter and place them in a suitable patty tin.
  4. Chill for 20 minutes.


To make the filling:

  1. Heat the oil in a skillet, add the onion, garlic and red pepper and fry gently until softened.
  2. Stir in the zucchini, tomato, thyme, salt and pepper then cover and cook gently for 10 minutes.
  3. Spoon the warm mixture into the patty cases and sprinkle a portion of Kingdom cheddar over the top of each.
  4. Cook at 400F for 15 minutes until the cheese is browned and bubbling.
  5. Serve and enjoy while hot.
