Ingredients for the pastry
- 1½ cups all-purpose flour
- ½ cup butter
- ½ cup Kingdom cheddar, shredded
- ½ tsp mustard powder
- 1 tbsp cold water
Ingredients for the filling
- 1 tbsp sunflower oil
- 1 onion, chopped
- 1 clove garlic, chopped
- 1 red pepper, thinly sliced
- 1 zucchini, diced
- 2 tomatoes, chopped
- 1 tsp chopped thyme
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup Kingdom cheddar cheese
Method
To make the pastry:
- Put the flour and mustard powder in a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
- Mix in Kingdom cheddar, adding enough water to form a firm dough.
- Turn onto a floured surface and knead lightly until smooth. Roll out thinly and cut out 12 disks using a 4inch plain cutter and place them in a suitable patty tin.
- Chill for 20 minutes.
To make the filling:
- Heat the oil in a skillet, add the onion, garlic and red pepper and fry gently until softened.
- Stir in the zucchini, tomato, thyme, salt and pepper then cover and cook gently for 10 minutes.
- Spoon the warm mixture into the patty cases and sprinkle a portion of Kingdom cheddar over the top of each.
- Cook at 400F for 15 minutes until the cheese is browned and bubbling.
- Serve and enjoy while hot.
